      • The sanitizer solution in the kitchen measured 1000 ppm Chlorine residual.This was corrected by preparing a 100 ppm chlorine residual sanitizer solution.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • After multiple runs the high temperature dishwasher was only able to achieve a temperature of 63 degrees Celsius at the plate level.Operator will manually sanitize all dishes, utensils and equipment in 100 ppm Chlorine until dishwasher is repaired and reaching a minimum temperature of 71 degrees Celsius at the plate level.
