- The ventilation unit above the deep fryer was noted to have debris and buildup. Please ensure the unit is cleaned and maintained in a sanitary condition to reduce the risk of cross‑contamination.

- Water was not running in the mobile unit at the start of the inspection due to frozen tanks and pipes caused by cold weather. During the inspection, the operator was able to restore water flow through the sinks. Ensure water supplies are available in the mobile unit during operations.

- A paper bag of citric acid was observed to have some water staining on the bottom. The bag was double layered and the inside product did not appear affected. The citric acid was transferred to resealable plastic bags.Discussed with operator - ensure to protect food from contamination. Products that come in paper bags (or other absorbent materials) can be placed inside and stored inside non-absorbent storage bins (such as plastic containers) or should be transferred into non-absorbent containers. This helps to ensure that food inside the bags is not subject to contamination from liquids or other contaminants that the bag comes into contact with.
