      • Observation (CORRECTED DURING INSPECTION): Observed a container of BUSH Permicol Synthetic Food Color Orange Red Powder was observed onsite.
      • Corrective Action(s): Container was discarded by the operator. Do not use this food coloring on food as this ingredient is not safe for consumption.

    • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): 1. Handwash station by the kitchen entry door was blocked by a prep table.
      • 2. Missing paper towel in the dispenser in the handwash station of the server area.
      • Corrective Action(s): 1. Immediately remove the prep table so that the handwash station is accessible.
      • Your facility is designed and approved based on the number of handwash stations available, therefore they must all be accessible to allow for proper handwashing when required. If this issue is noted again in the future, escalated enforcement actions may ensue.
      • 2. Operator replaced the paper towel in the dispenser during the inspection. Have all staff fill or notify the person in charge to ensure the handwash stations are fully stocked with liquid soap and paper towel at all time.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: 1. Multiple containers of food stored uncovered in the walk-in cooler. Some food, including a container of uncovered cooked eggs, were noted stored on the floor of the walk-in cooler.
      • 2. Improper dispensers, with no handles (single-use bowls), were used and stored within bulk spice/ condiment containers.
      • Corrective Action(s): 1. The container of cooked eggs was moved onto a shelf in the walk-in cooler.
      • Cover all food with a lid/ plastic cling wrap.
      • Move all food that is stored on the floor to a shelf that is 6 inches off the floor.
      • 2. Replace all improper dispensers with ones that comes with a handle - store in a manner where the handle does not come into contact with food.
      • Date to be corrected by: May 24, 2025

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Heavy grease buildup noted on the fume hood.
      • Corrective Action(s): As per operator, the fume hood is scheduled for professional cleaning in the first week of June.
      • Please have staff maintain the cleanliness after the deep clean is perform. Staff should clean the fume hood at least weekly, if not more often, and take out the baffles and run them through the dish machine.This will prevent a potential grease fire and attraction of pests at the facility.

      • Observation:
      • Door seals of freezer have still not been replaced. Current seals are dislodged and peeling off. Operator informed that the parts have been ordered.
      • Corrective Action(s):
      • Ensure door seals are secure on the freezer so the doors shut properly to maintain the proper temperature. To be corrected by June 1, 2024.

      • Observation:
      • 1. Ice machine has mould growth on both sides inside the machine.
      • 2. Baffles of ventilation canopy has heavy build up of grease and debris.
      • Corrective Action(s):
      • 1. Discard ice immediately. Clean and sanitize ice machine as per the manufacturer's instructions. Discard the first batch of ice prepared. To be corrected today. Ensure to follow your Sanitation Plan for cleaning of the ice machine.
      • 2. Clean baffles of ventilation canopy.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION):
      • Concentration of QUATs sanitizer in the following spray bottles = 0 ppm:
      • - Server station
      • - Near prep cooler located beside the freezer
      • Corrective Action(s):
      • Immediately replace the QUATs sanitizer in both spray bottles. Ensure to check the concentration of the sanitizer using test strips to ensure the sanitizer is maintained at 200 ppm for adequate sanitation.

      • Observation (CORRECTED DURING INSPECTION):
      • 1. Hand washing station upon kitchen entry was completely blocked by a prep table. Person in charge informed they had a catering event so they required more space to prep.
      • 2. 2-compartment prep sink was temporarily being used as the hand washing station while the prep table blocked the designated hand sink. However, this sink had no hot water as it was turned off from the bottom.
      • 3. No liquid soap available in the employee washroom.
      • Corrective Action(s):
      • 1. Immediately move the prep table away from the hand washing station.
      • 2. Turn on hot water for the 2-comp prep sink.
      • 3. Immediately place liquid soap in the dispenser in the employee washroom.
      • Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water, AND are easily accessible at all times.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation:
      • 1. Several food items in the walk-in cooler found to be uncovered.
      • 2. Open can of tomato paste sauce stored in the walk-in cooler.
      • Corrective Action(s):
      • 1. Cover all food items in the walk-in cooler with a food grade cover.
      • 2. Transfer tomato sauce from the open can to a food grade container. Do not store opened cans in the walk-in cooler as it may cause a chemical contamination.

      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation:
      • Door seals of freezer are coming off and dislodged.
      • Corrective Action(s):
      • Install secure door seals for the freezer to ensure the doors seal properly and the temperature is maintained at or below -18 degrees Celsius.
