    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The concentration of bleach water in the spray bottles intended for sanitizing food contact surfaces was undetectable.If using bleach water for sanitizing food contact surfaces, the concentration must measure between 100-200 ppm.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Food was found in a cooler that was non-functional due to the fact that the facility had no power available.Internal temperature of bags of cheese measured 20 degrees Celsius. Cheese was discarded.Internal temperature of cooked beef measured 28 degrees Celsius. Staff stated that the beef had been made less than an hour previous. Staff reheated the beef on the flat top barbeque grill immediately.
    • 14. Does the special event vendor have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • There was no water available for the food facility due to the fact that the sinks had no power, so sump pumps could not be used. Food was being prepared without water being available.Water and the ability to wash hands is a requirement before any food preparation takes place.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooked beef that was reheated on the barbeque and had just been removed from the barbeque had an internal temperature of between 50 -60 degrees Celsius. Instructed staff to return the beef to the barbeque and to use the thermometer to ensure the internal temperature reaches at least 74 degrees Celsius.
