- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Staff on site indicated that "Sunshine All Purpose Cleaner" spray was being used in the kitchen. Note that this product is a "cleaner" and not a sanitizer solution. As per the Alberta Food Code:Kitchen cleaning should involve:i) removing gross debris from surfaces;ii) washing by applying a detergent solution to loosen soil and bacterial film iii) rinsing with water to remove loosened soil and residues of detergent;iv) sanitizingA chlorine solution at an appropriate concentration is an approved method of sanitizing. A jug of bleach was present under the kitchen sink and is available for use. This facility is asked to obtain a spray bottle to prepare and store an appropriate chlorine solution spray. The spray bottle should be properly labelled to identify its contents. ORThis facility can look to obtain a quaternary ammonia product to meet the sanitizing requirement.

- FOR SANITIZER SOLUTIONS: A sample supply of appropriate test strips was left on site with the operator. The health inspector will send the operator links to appropriate test strips that are capable of testing sanitizer solutions to ensure that they are maintained at 100-200 ppm.
