- Observation (CORRECTED DURING INSPECTION): 1. Cell phone observed stored on cutting board surface. Cell phones are contaminated and should not touch food contact surfaces.

- 3. Thawing packaged meat in prep sink with other utensils in use. Other products may mix with this product while it is thawing.

- Observation (CORRECTED DURING INSPECTION): Big pot of rice observed being cooled with lid closed.
- Rice packed pretty tight, pot filled all the way to the top.
- Operator stated they cooked it one hour ago.
- Probe internaly in the center reads 75C, outside edges 56C, Surface IR reads 45C.
- Corrective Action(s): Instructed staff to immediately spread out the rice onto a hotel pan. Spread out rice into a shallow layer to facilate faster cooling. Seperate into multiple pans/containers if neccessary. Do not cover when cooling.
- Food must reach 60C to 20C in 2hours before placing in the fridge to continue cooling from 20C to 4C in 4hours.
