- All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. Over 50 mouse droppings were found on pallets inside of the walk in cooler and dry storage perimeter, clean up all evidencee of pest activity.
- 32. FOOD AND NON-FOOD CONTACT SURFACES PROPERLY DESIGNED, CONSTRUCTED AND MAINTAINED
- All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Some of the card board bozes salted fish have some powdery mold on the outside surfaces, the manager started opening, inspecting and changing out the moldy boxes at this time. The storage racks along the west wall of the cooler are rusty and the fans in said cooler are dirty; clean,sanitize, repair or replace the damaged and unsanitary racks and fans.

- The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. The floors are dirty and have mouse droppings around the perimeter; wash, rinse and sanitize the floors from corner to corner.
