- Farm StoreUninspected eggs are no longer being sold from the store.Low-risk baked goods were observed being offered for sale. Please note that homemade baking is not permitted for retail sale and must be prepared in a permitted commercial food establishment.There was also a sign on the refrigerator for “Brazil Pizza by Heitor Mergen – Fresh Frozen,” though I did not observe this product in the fridge at the time of inspection. This individual does not currently hold a permit; therefore, their products cannot be sold from the storefront at this time.The operator indicated plans to submit an application for Farmers’ Market status. If approved, this may allow certain products to be sold on designated market days.

- StoreThe store is now offering scooped hard ice-cream along with fancy drinks. There is no sink in the store which is required when preparing foods. The few scoops and other dishware could be washed, rinsed and sanitized in the hot lunch kitchen.

- Two cartons of eggs were observed in the hot lunch fridge and had a date of 2024 NO 28. This fridge was observed to be stocked with bread, whip cream, eggs and ~5 jars of home-made carrots. Canned food that is not from a commercial source is not permitted. Un-inspected eggs are not permitted (not sure if these are expired eggs or from the school farm but they are not permitted for the breakfast program or hot lunch program). CORRECTED Farm StoreNone of the farmers sausage is labeled as to what kind of meat the sausage is, where it came from, or date/lot code information. I could not find this information on the main box either. A referral was made to the area inspector.Eggs were not properly labeled to identify them as un-inspected. CORRECTED HOWEVER STILL ARE NOT ALLOWED FOR SALE IN A PERMITTED ESTABLISHMENTHome canned food was observed for sale which is not allowed. CORRECTED - REMOVED FROM SALEMeat & Co does not appear to have a permit for selling their product (observed for sale in store). I will look into this further. CORRECTED - NOW PERMITTED

- Dishes i.e. cups, plates etc. are not permitted to be reused (store and hot lunch). If you wish to continue selling specialty drinks from the store then this area will need to be upgraded to include water. Please reach out to me prior to doing any modifications. SINGLE USE COFFEE CUPS OBSERVEDYour food handling permit allows for limited food handling (i.e. wraps, breakfast sandwiches and similar type foods) and was not intended for large volumes of raw meat products to be prepared (i.e. turkey's). This does concern me because often foodborne outbreaks are due to predictable errors. People are more prone to error when they carry out high-risk and time pressured tasks i.e. food handlers working under tight time frames like having to have lunch ready for about 100 people by noon. Are you able to please send me a list of the hot lunches for the year so I can review it. I appreciate that the school is unique from other schools as it has a farm/agricultural program. Some different ideas were discussed for the store and the selling of the agricultural products, please keep me updated on what you find out. I am more than happy to assist you in exploring some other potential options if needed.

I trust that the ground beef is from an approved source however there is no lot/date code information on the packages for traceback. - Your permit does not allow for dishes to be reused. The domestic dishwasher is not permitted because it takes several hours to run a load on the sanitizing cycle which is not practical; commercial dishwashers can typically complete a load in less than 5 minutes. I was advised that about 100 hot lunches are served which means lots of dishes. Washing this many dishes by hand is also not practical as they would need to be washed, rinsed and sanitized for 2 minutes then left to air dry.
