      • - The internal temperature of corn chowder soup stored in a hot-holding unit measured at 53C. Staff indicated they cook the soup in the hot-holding unit after defrosting the product.
      • Corrective Action(s):
      • - Staff reheated the soup on a portable induction cooktop to 74C during the inspection.
      • - Do not cook food on a hot-holding unit. A hot-holding unit is intended to hold food at 60C or above and is not designed for cooking.

      • 1. White substance observed on the back of the lid of the ice machine.
      • 2. Blender and stirring spoons observed stored in murky, lukewarm water.
      • Corrective Action(s):
      • 1. Staff removed the white substance and sanitized the area with surface sanitize at the time of inspection.
      • 2. Blender and stirring spoons were removed from the water.
      • - Ensure blender and all in-use utensils are washed at least every 4 hours or more frequently when needed.

      • Corrective Action(s): Ensure all sanitizer spray bottles and containers are replenished regularly.
      • All open containers need to be replenished every 2-4 hours or when very soiled.
      • All closed containers (spray bottles) need to be replenished weekly to ensure the concentration is maintained.
      • Periodically verify with test strips that the sanitizer dispenser in the back is also maintained at the proper 200 ppm QUATS as it is the source for the other smaller containers used daily.

      • Corrective Action(s): Ensure sanitizer is available in a bucket with wiping cloth as an improved option to sanitizing the food prep surface. Spray bottle may get on exposed food or this possibility may prevent regular sanitizing of sandwich prep space.

      • Corrective Action(s): Ensure all areas of premises are regularly cleaned.
      • 1. Schedule regular cleaning of this lower back wall and monitor of spills and splashes.
      • *Recommend looking and sealing/blocking the large gap between the wall and table to prevent food debris from falling behind table.
      • 2. Ensure all high moisture areas such as between cooler doors and seals are wiped daily to prevent mold growth.

      • Observation (CORRECTED DURING INSPECTION): Handwashing station by walk-in freezer had paper products inside. When paper products were removed to wash hands, staff mentioned that they do not use this handsink. Repeat.
      • Corrective Action(s): All handwashing stations must be accessible, nothing stored inside and always equipped with hot, cold running water and soap, paper towel. Do not use this sink as extra counter space to store miscellaneous items.

      • Observation (CORRECTED DURING INSPECTION): Wet wiping cloth used for the steaming wand of espresso machine is usually left on the drip tray of espresso machine or on a plate. No sanitizer used.
      • Corrective Action(s): Directed staff that the wiping cloth for steaming wand also needs to be soaked in sanitizer between uses. 100ppm chlorine is made using 1 tsp bleach to 1 litre. Obtain more test strips as none could be found onsite at time of inspection.
