      • Observation:
      • The following foods were above 4C:
      • - foods in the two door sliding glass door cooler
      • - inserts on the table top by cookline

      • - salad prep cooler
      • - tomato sauce by cookline
      • Corrective Action(s):
      • While the operator has attempted to provide ice baths, this is not sufficient as a permanent solution to your coolers not working and/or not having enough space within the working coolers. Operator states that these malfunctioning coolers are only used during rush to help keep the temperature down, and foods are not stored in these units overnight. Regardless, this is not a permanent solution - repair or replace coolers by Wednesday August 16, 2023.
      • The foods listed above must be discarded two hours after being brought out of the working cooler (walk-in cooler); operator states that they were brought out at 5pm; these must be discarded at 7pm and a fresh batch taken out of the walk-in cooler.

      • 1) Use an ice water mix to ensure that the inserts are completely surrounded (not just the bottom) and that all the food is at 4C or colder.
      • 2) Rails in vegetable cooler appear to have turned the temperature dial in the back of the unit. Adjust.

      • Observation (CORRECTED DURING INSPECTION): Cooked food (rice, large stock of tomato sauce) allowed to cool at room temp for long periods of time before being put away over night in walk in cooler with lid.
      • Corrective Action(s): Ensure all hot food requiring cooling is rapidly cooled:
      • 1. Ice wand (cooling wand)
      • 2. Ice bath
      • 3. Small, shallow containers
      • Cooling time:
      • >60 C to 20 C in 2 hours
      • 20 C to <4 C in 4 hours
      • Total cooling time: 6 hours max - verify after cooling with probe thermometer.
      • Any longer then 6 hours then food must be discarded - too long in the danger zone.
      • Recommendations:
      • 1.Educate all staff of the proper cooling practices.
      • 2.Post cooling procedure on the wall near cooling sink
      • 3.Purchase a ice wand to speed up cooling time

      • 1. Keep all raw meats stored away from or under ready to eat foods - even foods that will be clean during prep.
      • 2. All food put away to be stored in coolers must be covered. Cover all buckets of food to prevent contamination. Operator says they were left without lids to allow additional cooling - this is acceptable for a short duration however long term (over night) storage must involve covering food.
