- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The mechanical dishwasher did not have a chlorine residue. Action shall be taken to repair the dishwasher so a 100ppm chlorine residual is present. Until the dishwasher is repaired, all dishware/cookware shall be immersed in 100ppm chlorine solution for 2 minutes then air dried.
