    • 203 - Critical Food not cooled in an acceptable manner [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) During site visit observed a large pot of chilli at 24 degrees Celsius being cooled in the walk-in fridge.
      • Corrective Action: Split the chilli into manageable portions (smaller portions) to allow quicker cooling of the dense food mass. Ensure to follow adequate product cooling procedures, as specified in the Food Code.
    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) During site visit observed meat products stored above ready to eat products. The meat products were uncovered.
      • Corrective Action: Ensure to store all meat below ready-to-eat food products. Also, ensure all perishable food in cooler storage is covered/stored in food grade containers/food grade plastic wrap.

      • Observation: (CORRECTED DURING INSPECTION) Bags of flour and other baking ingredients were stored inside a container uncovered on the ground. Food ingredients should be stored 15cm off the ground for easy cleaning and reduce risk of attracting pest.
      • Corrective Action: Operator covered and moved ingredients onto pallets.
