     • Observation(s): Staff member said that she had received some word from management that there would be program implementation in the future.

   • F3.4 - Are the premises, equipment and utensils designed and maintained to ensure safe and sanitary food handling?
     • Observation(s): F3.4A Fluorescent lights require shatterproof light covers or "fluorescent bulb tube guards" on all lights above food processing, food storage, warewashing areas to prevent contamination with broken glass fragments in the event of bulb breakage. Two fluorescent light fixtures in the dry canned goods/laundry area are missing shatterproof covers which could result in broken glass fragments falling down if the bulb were to break. F3.4L Daylight is visible under the double back doors (near laundry area). Please install a door sweep/weather stripping to prevent the entry of pests. Ventilation hood due for service June 2018 - good.
     • F3.4A - Premises must be provided with artificial lighting that is sufficient to permit sanitary operation and maintenance of the premises.
     • F3.4L - The premises must be protected against entry of pests.

     • Observation(s): 4.2 Accurate NSF certified thermometers required for all cold holding equipment including freezers. Walk-in cooler and walk-in freezer are equipped with an outdoor thermometer that is not NSF certified. Temperature logs for cold holding equipment are kept multiple times per day.
     • 4.2 - Accurate thermometers must be provided to monitor equipment.
   • 19 - Is the food service establishment in compliance with all trans fats requirements of the Public Health Impediments Regulation?
     • Observation(s): 19.1 Uncooked "breaded veal steaks" #72635 from Sysco is missing the nutrition facts table on the packaging. Box lists hydrogenated soybean oil as one of its ingredients. Provided the trans fat regulation information card. Ensure all foods on the premises meet the trans fat requirements.
     • 19.1 - The food service establishment must have appropriate documentation on site and available to the health officer and shall include ingredient lists, nutrition facts table or product specification sheets for all food in the establishment.
