      • Chlorine solution was at 50ppm. Ensure that your chlorine sanitizer is at 100ppm to effectively sanitize food prep surface.

      • Dishwasher first rinse cycle was at 65C.Ensure that rinse temperature is at least 71C.Second rinse cycle was at 77C. Ensure that the dishwasher is ran twice prior to placing in the dishes and temperature is at least 71C at plate level.
