- 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
- A splash guard is needed between the hand sink and the cookline food preparation area and at the kitchen 2 prep area to prevent contamination.Ensure splash guards are in place between all hand washing sinks and food preparation and/or food storage areas.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The coffin cooler salads and cut cheeses displays in the dining room and bag up rooms measured greater than 4C. Discussed issue with camp manager and chef during inspection. Ensure salads are not kept in the temperature danger zone for prolonged periods of time during portioning. Ice baths for each product identified over 4C were prepared during the inspection. Taco station display ice storage was not sufficient to maintain required temperatures. Discussed ice storage with the camp manager - ice storage was adjusted during the inspection.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- There is a lack of convenient access to a hand washing sink in the phase 2 production line area of kitchen 2. Discussed this issue with the camp manager and chef during the inspection. Either alter the location of food preparation to not include this area and/or install an additional hand washing sink.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- The 3-compartment sink at the pot wash station had a constant drip that requires repair.Walk-in cooler C18 was dim and requires additional/brighter lighting.Phase 2 production kitchen line 2 there was a broken electrical outlet cover noted that requires repair.Walk-in freezer F3 had a section of damage flooring with exposed subfloor that requires repair. Ice build up was also noted on the floor of this freezer - have the unit serviced as required. Walk-in cooler C4 ceiling was in disrepair - potential water infiltration causing sagging. Identify and repair the cause of the damage and replace any damaged materials.
- 23. Is the facility maintained in a clean and sanitary condition?
- The following items/areas were visibly dirty and require cleaning:- dishwasher fringe/curtains- potwasher area wall at 2-compartment sink- hot boxes - outside and inside- rational oven racks- walk-in cooler C18 floor- walk-in cooler C4 ceiling
