    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The operator reported that the walk-in cooler had not been maintaining satisfactory temperature since 12 pm on the day of inspection (note: inspection started at 1 pm), and that high risk foods had been transferred to other coolers/freezers. Observed cartons of whole raw eggs stored in the cooler. The cooler was maintaining 15C. The surface temperature of the eggs was approximately 13C-15C.- Advised the operator that raw eggs must be kept at 7C or colder. The operator transferred the eggs to other coolers during inspection. - The operator advised that a work order has been submitted to the cooler service provider to investigate/repair the cooler.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Observed 2 dishracks that were not maintained in clean and sanitary manner. Manager advised the racks were not in use. PHI advised manager to clean and sanitize the racks or to throw them away, if not used any longer. Manager discarded them into the dumpster at the time of inspection.
