Cleaning and sanitizingHigher risk
Anything that touches food, such as cutting boards, dishes and utensils, must be washed, rinsed and sanitized. Inspectors check dishwasher temperatures, sanitizer strength and how wiping cloths are stored. Poor sanitizing lets bacteria survive from one use to the next.

1 infraction
- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: Water dripping from the condenser in the walk in freezer causing ice build up on the boxes of food directly below the condenser and the floor. (Public Health Significance): Water dripping from the ceiling inside the walk in freezer risks significant contamination hazards, dripping water onto the floor and directly onto food products creates a serious contamination risk, as moisture can carry micro-organisms and debris that may fall onto exposed foods, packaging, or food contact surfaces, increasing the likelihood of foodborne illness and leaks also indicate potential structural or sanitation issues that compromise the integrity of the refrigeration environment and increase the risk of contamination. Water dripping from near the light fixture creates an electrical hazard, which may result in equipment failure, electrical shock, or fire, posing an immediate safety risk to staff and compromising the safe operation of the cooler. The ice build up is also a slipping hazard within the walk in freezer.
- Corrective Action: Repair the condenser so there are no more leaks causing ice build up within the walk in freezer. Chip the ice away from the outer food boxes and the floor to prevent a slipping hazard.
