    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • - The three-sink dishwashing method is in use for the dishes. However, the sink size is insufficient for some of the larger metal trays. Staff explained that they turn the trays upside down to sanitize them properly.*Dishwashing in the facility must be capable of accommodating the largest utensils in use.**Installing a commercial dishwasher is strongly recommended to meet the needs of the facility. Alternatively, the sink could be replaced, or dishes that cannot fit into the sink should be removed from the kitchen. A follow up will be done to ensure compliance.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The bleach sanitizer spray was measured more than 200 ppm of chlorine.*The staff discarded the bleach solution and prepared a new batch, which was tested at 100 ppm. A concentration of 100 ppm is considered food-safe for sanitizing. Please ensure that the concentration is checked daily after preparing the solution.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Deep cutting grooves were observed on the chopping boards.*The staff discarded the boards. Deep grooves make it difficult to properly sanitize the board, increasing the likelihood of food residue remaining, which can lead to bacterial growth.
