      • Utensils such as rice portioning spoon were store in room temperature. - Store in an ice bath to maintain temperature below 4C or in hot holding at 60C or higher or wash, rinse and sanitize at least every 2 hours.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • " OVERDUE VIOLATION"Walk-in cooler light was burnt out. Lighting fixture must be fixed by the stated target date on this report. All lighting fixtures must be in a good state of repair to ensure adequate sanitation and to prevent contamination.

      • Quat sanitizer in the red bucket at the back was measured at less than 100ppm.A new solution was prepared by the operator which was measured at 200ppm.-Ensure that the Quat sanitizer is maintained at 200ppm.

      • "Repeated Violation" Rice pot was repaired with green tape. Fix/replace the rice pot.
