      • February 12th, 2026: Dishwasher was tested to be sanitizing at 51.6C which is not satisfactory. No exact timeline for repair/replacement has been provided. Work Order issued. January 27th, 2026: Ecolab is set to install the new booster and upgrade the dishwasher. Please provide an update as soon as this work is completed. December 16th, 2025: The dishwasher hit proper temp when tested at the time of the inspection. However, it appears to hit proper temps intermittently as the booster is failing. A new booster has been acquired and just needs to be installed. Please test the dishwashers rinse temp frequently through the day, if it starts to not hit proper temp (71C) then start manually sanitizing all dishes until the new booster can be installed.December 9th, 2025: The high-temperature mechanical dishwasher was run three times, and the sanitizing rinse cycle did not exceed 54C. Please have the dishwasher serviced such that it is operating properly and sanitizing at 71C. Until the dishwasher can be fixed, all dishes must be manually sanitized in an approved food safe sanitizer.
