      • 1. The chemical sanitizing dishwasher measured 0ppm of sanitizer. Repair the dishwasher so that it reads between 50-100ppm of bleach sanitizer. Until such time as the dishwasher has been repaired, all dishes must be sanitized by soaking them in a sink with at least 100ppm bleach.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1. While there is a pest control system in place, there is no documentation of the activities. Create and maintain documentation showing when the pest monitoring devices are being inspected - typically once a month is sufficient.

      • 1. Buckets of food were uncovered in the walk-in cooler. Keep foods covered in storage to prevent contamination.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 1. There was a three-compartment sink and chemical sanitizing dishwasher. The sanitizer was measured at 0ppm. Repair the dishwasher so that it operates with 100ppm bleach in the sanitizing cycle.Until the dishwasher is repaired, dishes must be sanitized manually in the sink.

      • There was a tray of raw packaged meats in the line cooler on the west side of the kitchen that was above produce. Tray was moved to the lower shelf. Please ensure raw meats, eggs are stored below ready to eat foods and produce to reduce the risk of contamination. Please do not leave opened bowl of tortilla chips on top of the refrigerator - please keep them covered to protect them from contamination. Plastic food baskets with liners were near the handsink. These were moved at the time of the inspection to protect them from contamination from overspray from the handsink. All foods stored up on shelving in dry storage areas and walk in coolers.
