      • The concentration of the quaternary ammonium sanitizer was recorded below 200ppm. The manager refilled the sanitizer, and the new sanitizer solution was measured to be 200ppm.

      • A container of flour had the scoop handle making contact with the flour. Ensure that the scoop is stored in a separate container or in a manner that prevents the handle from coming into contact with the food.

      • wiping cloths were not being stored in a sanitizing solution. Cleaning cloths were observed on food preparation surfaces in the kitchen. Ensure the cleaning clothes remain submerged in a bucket pail of 200ppm QUATS or 100 PPM Chlorine sanitizer solution at all times.

      • Scoops used in the bulk bins had soiled handles used to portion food items in dry storage bins. Please ensure the scoop handles are stored away from the bulk food (Flour & Milk Powder) to prevent food contamination. Store scoops with the handles out of the bulk food.
