    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Cooked hamburgers stored in liquid on the flattop measured 39C. Burgers were discarded. Please ensure that all items in hot holding measure at least 60C at all times.2. Cut vegetables stored on top of ice measured 12C. Please add water to ensure a properly prepared ice bath, capable of submerging product in inserts and maintaining a temp of 4C or lower at all times
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Soap was not dispensing at the hand wash station by the dishwasher
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. Soiled utensil for scooping food left out on top of service line. Scoop sent to dish. Please ensure that utensils are sent to dish after use2. Salad mixing bowl stored directly on open lettuce. Bowl sent to dish. Please ensure that non-food items are not in direct contact with ready to eat foods.3. Clean knives were stored beside hand wash sink in the splash zone. Please do not store anything in the splash zone of the sinks
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Dishwashing sanitizing records were not properly maintained. Corrective actions for lack of sanitizer indicated there was no sanitizer available (Jan 4-17 2025) but did not list any steps taken to ensure dishes were adequately sanitized during this time frame. Please ensure that non-compliances are immediately addressed and properly recorded when they occur
