      • Observation: Live mice were observed running around near the proofer and on top of the rol-sheeter machine.
      • Rodent droppings were observed throughout the whole premises, especially in all the corners. Droppings were in significant numbers in the following areas (but not limited to):
      • - in all the corners/back of the walls of the baking prep area and the dishwashing area
      • - in crevices of the back area and on top of shelves near the proofer
      • - below the coolers beside the front windows, the corner of the window, and below the grocery shelves
      • - in between machines and equipment (in between cooling rack ridges)
      • - in the corners/back of the walls of the baking area beside staff washroom
      • Corrective Action(s): This is a repeat violation. Ensure to do a deep clean of the premises and clean and sanitize all area where rodent droppings are visible.

      • Observation: At the time of inspection, the front dishwasher was stated by staff to in repair. Staff have been dishwashing by hand. Staff have stated the techician is to come back on site by tomorrow.
      • Corrective Action(s): Ensure the dishwasher is repaired by tomorrow. Ensure that in the meantime staff are following proper handwashing protocols.

      • Corrective Action(s): All food from display cooler moved to alternate cooler during inspection. Repair company called to adjust/repiar cooler during inspection. Repair due today.

      • Observation: Significant mouse activity noted throughout premise including the following areas (but not limited to):
      • - under front display cases
      • - behind cabinet on wheels across from above noted display cases
      • - on bread slicer and around this unit on the stand
      • - behind the three door cooler that is no longer working near the walk in cooler
      • - in the storage areas for misc equipment next to oven and walk in cooler
      • Corrective Action(s): Have a deep clean of the premise, removing all mouse droppings and nesting related materials. Use a degreaser to remove all grease residue and bleach all areas where mouse droppings are found. Operator requested a due date at the end of the month (February 28, 2025) - ok.

      • Observation: Hole around metal cased wire below electrical panel. Mouse activity notes around hole and this could be an area where they are using to access main area

      • Observation: Numerous mouse droppings observed on floor along the walls. Nesting material (ie shredded paper) observed under two main unrefrigerated display cases. Premise currently working with a pest control company, many traps were set throughout premise but reports were not available during inspection.
      • Corrective Action(s): Do a deep cleaning of the entire premise removing all mouse droppings and flour build-up, especially in the harder to reach areas along the walls and in corners behind/under shelving units and large equipment. Reviewed some of the areas of concern with staff.
      • Once area has been deep cleaned and all dirt/debris/droppings have been removed, bleach areas with a 10% (1 part bleach in 9 parts water) solution to remove the mice's pheromone trail.
      • Contact pest control company and arrange to have traps reset and more traps set as soon as the deep clean is complete.
      • Have pest control reports available for review at follow-up inspection
