    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Hand sink at kitchen entrance / backdoor has low water pressure. Baseboard on kitchen cabinets lifting and not finished to the corner, exposing MDF. *Increase water pressure at the hand sink tap.*Seal and finish baseboard edges with paint or caulking or replace baseboards to cover the full length where MDF is exposed. The purpose is to seal and make the surface cleanable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Fridge next to dishwasher contains food spills on fridge shelves. Ice machine top section inside, above the ice, is building up dirt and under the lid crevice. Top of ice machine is dusty and ice scoop is stored in the dust. Mice droppings found behind chest freezer in bar. Fumehood filters grease is building up. Vent in atrium is dusty. Walk-in cooler drain-hose is building up scum.*Clean and sanitize fridge.*Clean and sanitize ice machine including the portions above the ice, the lid, and the top of the machine. Keep ice scoops stored in a cleanable, sanitized container. *Clean up mice droppings and sanitize behind chest freezer.*Remove fumehood filters to degrease and sanitize, and re-install after cleaning.*Clean air vent from dust in atrium. (Filter needed?)*Clean and sanitize drain-hose in walk-in cooler.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Fridgidaire fridge next to the dishwasher and walk-in cooler do not contain a thermometer to monitor fridge temperature. Obtain thermometers to place in coolers for temperature monitoring.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Backstage single bathroom is missing paper towel. Supply paper towel.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Traps were placed in problem areas. Weather strip is still missing under the door in the table storage room. Replace weather strip.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Droppings in the storage room and mechanical room and around the grease trap is not adequately cleaned and sanitized. Clean and sanitize these areas.

      • Walk-in cooler temperature measured 7 degrees Celsius. Coolers must maintain a temperature of 4 degrees Celsius or less. Adjust cooler temperature.

      • Backstage single bathroom is missing paper towel. Supply paper towel.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mice feces is observed in the back storage room and mechanical room. A few droppings are noted in the kitchen storage room and around the grease trap. Saturate with 1:9 bleach to water and clean up mice droppings. Not all doors were visible in the building during inspection as some rooms were locked. The exit doors toward the coat room have a gap under the doors that can allow entry of pests. Ensure weather strips are maintained on all doors.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Bar floor is sticky, a few food splashes are noted on the side of cabinets in the kitchen and a few died flies are observed. Clean and sanitize the mentioned areas.
