      • Molding Racks present. Please ensure all equipment is clean and free from mold.

      • Cold storage foods were being held at improper temperature. Mayonnaise, butter, lettuce, tomatoes were being stored at 12 degrees. Cold storage foods are to be held at 4 degrees and below.

      • Facility is badly in need of thorough cleaning. Remove all food debris from the premises.There needs to be an updated cleaning schedule.

      • The following areas need to be cleaned and sanitized:-ceiling tiles, walls, and under tables and counters.Ensure the cleaning and temperature log binder is re-organized.

      • Prep cooler near front of kitchen measured 10C. Staff adjusted temperature of prep cooler.Temperature measured 3C after staff adjusted it.

      • Dishwasher chlorine measured <100 ppm.Chlorine container was empty.Staff changed out chlorine container with new.Contacted dishwasher technician. Staff primed dishwasher.Dishwasher chlorine measured 100 ppm.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There were missing or in disrepair floor tiles that need to be replaced or repaired.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The meat slicer is not cleaned adequately. Underneath the blade has dried food debris. Ensure staff know how to dismantle and properly clean and sanitize the slicer. Meat slicer is not used. Please clean and sanitize meat slicer and store away if not being used. The cutting boards on the front prep coolers are deeply grooved. Have the boards maintained to make them smooth again. A scoop was being stored in the dry storage container. Ensure scoops are not stored directly in food product. Knife was being stored in between prep cooler and hand sink counter. Ensure knife is stored in an appropriate manner.
