- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Only one sink currently available in the kitchen. This is inadequate for dishwashing and handwashing requirements. Operator indicated they had plans to install a dishwasher and more sinks if required.Until further sinks are installed there must be a process developed to ensure safe food handling and dishwashing. Reusable customer dishware is not acceptable for use until more sinks are installed.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- A pest monitoring program is not in place. Even when pests are not evident a pest monitoring program must be implemented. A sample pest monitoring checklist will be provided with this report.
