- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The old fridge near the entrance door measured 12 degrees. No perishable foods were stored. Please remove this fridge. Fridge storing beverages and sour cream is operating at 7 to 8 degrees Celsius. It is unknown when the fan cover was last removed and cleaned from dust. Sour cream was moved to another fridge. Open fan cover and clean inside. Ensure settings of cooler are set to operate at 4 degrees Celsius or less.A probe thermometer is not available to check cooking temperature of burgers. Obtain a probe thermometer to check internal cooking temperature with each batch.

- Grease has accumulated on the deep fryer and is dripping on the floor. Discussed using the pan to cover the deep fryer when not in use, face up, to also catch the grease dripping from the fryer baskets. Grease will be cleaned.
