- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Dish sanitizer was not observed to be completing a sanitation cycle when run during the inspection. The machine would start and run one (wash) cycle before turning off. An adequate wash and sanitizing temperature was also not reached according to the external gauge and manufacturer spec plate. Kitchen staff was instructed to use the 3-compartment sinks for sanitizing (using bleach in 3rd compartment or hot water booster if it works).
