      • Corrective Action(s): Restaurant just opened. Instructed all sauces not reaching temperature to be reheated to 74C or above before putting in the hot holding unit.
      • All potentially hazardous food (PHF) must be reheated to 74C before it goes into the hot holding unit. Hot holding unit must hold PHF at 60C or greater.
