- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1) Operator mentioned that the meat processing equipment is cleaned after every 8 hours. Discussed that when using surfaces and equipment continuously at room temperature to prepare food, it should be cleaned and sanitized as often as necessary - but at least every four hours.2)Reusable cleaning cloths were used for surface disinfection. Discussed with the operator to maintain the bucket of sanitizer solution (bleach at 100 ppm) to store used cleaning clothes.

- Test strips were not available to test the sanitizer solution.Please obtain the test strips to ensure the regular testing of sanitizer solution.
- 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
- Water sampling was not done at regular intervals for couple of months between October 2024 to January 2025.Discussed with the operator the requirement of monthly water sampling. Operator mentioned that water sample was submitted for February and March.
