      • Knives observed stored inbetween equipment ie adjacent to the sandwich prep cooler.
      • Corrective Action(s): Always store raw PHF's below ready to eat food items
      • Remove egg cartons as this is both a potential fire hazard and potential source of cross contamination.. Operator ordered non slip heat resistant material at time of inspection to replace the cartons with
      • The surfaces where the knives were stored cannot be properly sanitized. Recommend purchasing a magnetic strip to store clean knives once sanitized.
