- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1) No Quat sanitizer solution was prepared before starting of food preparation. -The operator prepared a new sanitizer solution which was tested to be at 200 ppm.-Ensure that sanitizer solution is always prepared before stating any food preparation/food handling.The concentration should be maintained at 200ppm for Quat and 100ppm for bleach.2) Wet cleaning cloths were placed on the counters of the food preparation areas.The cloths were removed.-Ensure that the cleaning cloths are placed inside the sanitizer buckets.
