      • A wire fry skimmer was observed to be in disrepair with fraying wires. Operator immediately discarded the skimmer.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Left hand side main line cooler was providing an average storage temperature of 44F (6.66C) as noted on the display thermometer in use. The kitchen manager noted that the unit has been acting up lately and is in need of service by their technician. Staff put in place ice in the meantime as a precaution and the kitchen manager has been advised to place a service call with their technician to service the units as soon as possible. Additional measures have also been in place such as relocating ingredients back into the walk-in cooler at the end of the day and recommendation provided for smaller portions to be used.
