- 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: Low temperature dishwasher was not in working order with sanitizing cycle not working properly. The sanitizer solution was measured at 0ppm chlorine. The chlorine solution was half full and was drawing the solution up but after the pump the solution was not being dispensed. The manager had tried to prime and had also cleared a jam in the sanitizer line. After this it was retested, this was measured at 0ppm chlorine. No sanitizing.
- Temporary Solution:
- As other cycles were still working and there is a 2 compartment sink located beside the dishwasher the operator was required to use one of the compartment sinks as a sanitizing sink with the chlorine water solution. This must measure at 100 ppm chlorine and the dishware must be submerged. The operator had called Ecolabs, they had responded and stated they would arrive same day for servicing and repair. Also note at the time the staff for dishwashing had not arrived, no currently washed dishware. Was noted at the time as still manageable as the staff in the kitchen were using previous washed and sanitized utensils and dishes.
- Corrective Action(s): Operator must repair or replace the unit so that it is in working order. Noted Ecolabs was scheduled to come in to repair the unit, manager spoke with Ecolabs during the inspection.

- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: Low temperature dishwasher in the dishwashing area did not have sanitizng cycle in working order. Noted the line was not priming and dispensing properly, manager also noted there might be a block in the line and repaired it. Tested the sanitizing concentration and this measured at 0 ppm chlorine.
- Temporary solution:
- - Operator had 2 compartment sinks located nearby the dishwasher unit. Temporarily the operator will use one of the sinks as a sanitizing compartment sink. Using chlorine at a 100 ppm concentration. The operator has sanitizer testing strips onsite to verify this.
- Note the operator had already called Ecolabs to repair the unit, Ecolabs responsed and stated they will arrive within 1 hour timeline. If EHO has left, the operator and Ecolabs will confirm verifcation of working sanitizing cycle with video/photos. Next day verifcation onsite will also be completed.
- Corrective Action(s): Operator must repair or replace the dishwasher unit so that it is in working order. Verification and onsite visit to verify will be required.

- Observation: The staff washroom was out of service due to the handwashing station not working, the operator had placed signage indicating this. There are multiple washrooms for men and women located in the facility. These will be used temporarily as the faucet for sink is being repaired.
- Corrective Action(s): Repair the hand washing station in the staff washroom so that it is in working order. This means to repair or replace the sensor faucet located in the staff washroom.

- Observation: Still Missing Sanitation Plan.
- Corrective Action(s): →Must submit sanitation procedures describing what must be cleaned and sanitized, frequency, and how the items are cleaned and sanitized.
