      • The meat slicer had dried food debris on top and underneath. Please ensure the slicer is dissembled after use, cleaned and sanitized.

      • Boxes and bags of food were sitting on the floor of the dry storage area. Butter was on countertop left uncovered.

      • There were no chlorine test strips to measure sanitizers concentration. Please purchase.

      • The commercial dishwasher was removed from the kitchen over a year ago. A domestic two-compartment sink is all that is available for hand hygiene and washing dishes.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Food grade sanitizer was available for sanitizing dishes, however test strips were not available. Please obtain appropriate test strips / test paper for testing sanitizer mixes.
