    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Dishwasher uses hot water for sanitizing (previously chlorine). Provide min/max thermometer to monitor dishwasher temperature and ensure it reaches 71C at plate level on santizing cycle. Dial usually should read 82C/180F to achieve 71C at plate level.
    • 15. Is the facility free of a pest infestation?
      • Mouse droppings noted next to freezer. Immediately clean and sanitizer area with any droppings (follow precautions as mentioned). Ensure you have a pest control program in place (including documentation of pest control processes - checklist provided). Recommend assessment by licensed pest control operator.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Dance hall/ front service area has doors that do not fit tightly in frame and have large gap underneath door. Provide sweeps or kick plates on the bottom of doors to exclude any pests and ensure doors fit tightly into frame.

      • There are a few gaps in the floor in the cook house with ovens. Ensure floor remains smooth and easily cleanable.

      • 1. Flooring in main kitchen has gaps/worn spots where wood is exposed. Ensure floor is smooth, impervious to moisture and easily cleanable. 2. Hand sink faucet is broken/leaking but still working. Repair faucet.3. Paint is peeling on ceiling above dishwasher and some mould growth noted in damaged areas. Ensure ceiling is smooth, cleanable and remove any water-damaged materials. Recommend additional ventilation around dishwasher area. 4. Back storage room with fridge has a floor that is flaking paint/damaged. Ensure floor is smooth, impervious to moisture and easily cleanable. 5. Back storage room ceiling is warped and has some mould growth. Repair ceiling and ensure it is cleanable/ does not hold moisture. 6. Some lights are missing shatterproof covers. Provide shatterproof cover for lights (this can include shatterproof bulbs, sleeves with end plugs, or plastic shields).
