      • Observation: 1) The dishwasher rinse did not have any sanitizer in it even after 3 tries.
      • 2) The sanitizer concentration in the buckets and spray bottles was only 50ppm.
      • Corrective Action(s): 1) Get the dishwasher serviced. In the meantime, wash the dishes in the dishwasher, then soak them in a sanitizer solution in the sink for 2 minutes, as discussed, before air drying.
      • 2) Refresh all the sanitizer solutions. Ensure you're testing the levels regularly and that you have 200ppm Quats available for use.

      • Observation: The breading mix in the bin above the cajun one did not have a proper scoop in it. Staff were using a measuring cup with a handle on the side to scoop up the mix. The bin with the kfc dredge wasn't covered and the scoop handle was touching the mix.
      • Corrective Action(s): Purchase a proper scoop for the bin mix in the bin above the cajun mix. Always cover the dry foods and ensure that the scoop handles are not in direct contact with the mix.
