      • Cold food holding temperatures were satisfactory.Cooked food items that were being held, were not hot enough, they were: Cantina - rice at 47 C, pulled meat at 51 C - discarded.Convenience store - smokies 42 C, hot hold cabinet food items 38 C - discardedThere was also a bag of dairy creamers labelled "Keep Refrigerated" in a dry storage cupboard in the convenience store area - these were discarded.Cooked foods are to be kept at 60 C or hotter, at all times until sold or up to 4 hours of holding.Follow food label directions when it says "Keep Refrigerated".Educate your staff as to what food items' temperatures must be kept at.

      • Cold food holding temperatures were satisfactory, except for the Cantina prep table cooler was at 5 C - this was turned to a colder setting.Hot food holding temperatures were at:smokies 50 C - this was reset to 60 C on the thermostat.hot holding cabinet was 45 C - thermostat turned to hotter setting.Note - cooked foods are to be kept at 60 C or hotter for a maximum of 4 hours and then discarded or sold within the 4 hours.Oct 2, 2024 - the smokies were at 56 C - these were discarded. - the hot holding cabinet was at 44 C - these food items were discarded - Cantina kitchen - prep table cooler was at 10 C - all food items in this prep table cooler were discarded. It was then discovered that the prep table cooler was unplugged. Operator plugged the prep table cooler back in.Note - operator has started to implement a program of checking temperatures twice per day and logging these readings - this is a good practice to have.

      • In the Cantina kitchen area a stainless steel table that has a built-in sink has been installed, there is hot and cold running water and liquid soap provided.The paper towel is on an uncovered pedestal next to the sink.The paper towel in the old kitchen area is also on an uncovered rod.Corrective actionPlease provide paper towel in covered dispensers, at your hand wash stations.Oct 2, 2024 - the covered dispenser can be a napkin-style unit that sits on the countertop OR a wall mounted unit.

A microwave oven will be installed above the electric griddle plates. The microwave is equipped with exhaust ventilation to the outside. This will be installed once the wall tile work is completed.3. The ceiling above this new food prep area will be finished in a metal material. A general purpose exhaust fan is mounter at the top of the wall in this ceiling area to remove heat.4.       • Using a product called Formula 333 - it was >400 ppm Quats.This should be diluted down to a solution of 200 to 300 ppm Quats.You will also need to have Quats test strips, to check on sanitizing solution concentration.

      • PREVIOUSLY - There were 3 to 4 large boxes of cut and wrapped frozen meat.The packages and boxes were unlabeled as to their contents or inspection status, located in the inside freezers.Owner reports that his outside freezer broke down and that he was currently purchasing a new freezer for these products ( to be then stored outside ).In future, do not store uninspected meat products in your store where you also have food products for sale to the public. These boxes of meat should have at least been labeled - NOT FOR SALE and properly taped up and sealed.TODAY - there was none of this uninspected meat out in the front public area freezer, but there was still some in the small kitchen freezer.UNINSPECTED MEAT IS NOT TO BE STORED ANYWHERE INSIDE THIS BUILDING.Jan 30, 2024 - this UNACCEPTABLE practice of storing uninspected meat, that is used as dog food for his guard dogs continues. This freezer of uninspected meat needs to be stored either outside or over in the liquor store building - not in an area or building that is used for human food storage and processing.March 11, 2024 - this issue is still OUTSTANDING and needs to be corrected.

      • In the QBD glass door cooler, staff have installed cardboard sheets and tape across the wire rack shelving, this is not acceptable.Having large pieces of cardboard across the shelves does not allow the cold air to circulate properly within the cooler.The cardboard and tape will need to be removed from the cooler.Just use the wire rack shelving on its own.

      • In the North kitchen - to the right and underneath of the hand wash sink, there is an open 3 box electrical outlet ( only one of the 3 boxes has an electrical outlet in it.This electrical box needs to be properly installed and sealed, to prevent water from getting into it, based on its location below and to the side of a sink.March 11, 2024 - this repair has not been made yet.

      • PREVIOUSLY - In the small kitchen there are cutting boards that are heavily grooved, stained and moldy.Specifically they were the 2 smaller (out of 4 ) cutting boards and the cutting board on the prep table cooler - THESE WILL NEED TO BE DISCARDED, AND IF REPLACED, THEY SHALL BE NEW CUTTING BOARDS THAT ARE IN GOOD CONDITION.Jan 30, 2024 - it would appear that the old, worn out, cutting boards have been removed and new cutting boards provided. Satisfactory. - NOTE - one of the newer white cutting boards was stored with its edge in direct contact with the floor, in front of the blue freezer. Make sure that food contact equipment is stored up on a shelf, not in direct contact with the floor.March 11, 2024 - situation has not changed.

      • In the small North kitchen - there was no sanitizer product present in this kitchen.At the direction of the PHI - staff were able to take a bottle of bleach from the front retail shelf and placed it into this kitchen.

      • In the north kitchen, there was a large jar of Miracle Whip with a Best Before date of 2023 MR 15, so almost a year beyond its Best before date. PHI had staff discard this jar of Miracle Whip during the inspection.

      • PREVIOUSLY - Front display cooler ( Coke ) with sandwiches and eggs, etc. was at 10 C - please have this cooler turned to a colder setting and/or serviced so that it will maintain 4 C or colder - for storage of these High Risk foods.Sept 6-2023 - ALL HIGH RISK FOODS LIKE SANDWICHES, MEAT AND DAIRY PRODUCTS WERE DISCARDED DURING THE INSPECTION.DO NOT USE THIS COOLER TO STORE HIGH RISK FOODS UNTIL IT CAN MAINTAIN 4 C OR COLDER. Hot holding of foodHot holding unit for cooked food items was at 55 C - this was turned to a hotter setting.Sausages/smokies on rolling grill were 49 C - these were turned to a hotter setting.ALL HOT HOLDING OF FOOD ITEMS MUST BE AT 60 C OR HOTTER.Sept 6-2023 - hot hold cabinet was 49 C and the smokies were 44 C - ALL OF THESE TEMPERATURE ABUSED FOOD ITEMS WERE DISCARDED DURING THE INSPECTION.Jan 30, 2024 - Coke cooler was at 10 C, but only used for canned and bottled low risk drinks. - The QBD cooler had the sandwiches now and was at 4 C - satisfactory temperature. BUT the right hand side of shelves were each lined with plastic, the full width and length of each shelf - this is not acceptable and these plastic liners need to be removed in order to have proper air circulation around all food items. - the smokies were at 30 C and were DISCARDED. - the other hot holding cabinet was at 61 C - satisfactory. - dairy creamers were in a container on a centre table, left at room temperature - these creamers were DISCARDED.

      • PHI observed that the back store room door was left open.Operator has installed a fabric screen with magnetic buttons, but none of the magnetics were being used or engaged properly.Also, with a fabric screen like this, mice can still enter through this door quite easily.Corrective ActionIf this back door is going to be left open for ventilation, you will need a SCREEN DOOR THAT HAS A RIGID FRAME.Note - PHI observed several flies within the facility, at time of inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • In the small kitchen there are cutting boards that are heavily grooved, stained and moldy.Specifically they were the 2 smaller (out of 4 ) cutting boards and the cutting board on the prep table cooler - THESE WILL NEED TO BE DISCARDED, AND IF REPLACED, THEY SHALL BE NEW CUTTING BOARDS THAT ARE IN GOOD CONDITION.
