- Observation(s): Commercial dishwasher does not function and parts have been ordered to repair. Unit has been broken for approx 1 year. There is a 3 compartment sink that is being utilized to wash , rinse and sanitize. Ensure that one capful of bleach is used per one gallon of water in the sink. The one capful presently being used is not adequate for the large volume of water in the sink which would be several gallons.
