    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Gravy in a pot on a stove measured 40C/104F. Operator indicated the gravy was kept off the heat for about 10 minutes and explained it was so the gravy did not burn. Worker was educated on ensuring high risk foods like gravy are required to be at 71C/160F or above at all times if it is meant to remain outside of a cold-holding unit. Worker put the gravy back on the heat and it came up to 76C/170F.If gravy burning is a concern, please consider using device like a crock pot where the temperature can keep the gravy above 60C/140F without burning. ENSURE:High risk foods do not sit at room temperature and are either maintained at below 4C/40F or above 60C/140F at all times.

      • Grease built up was observed over the hood ventilation. Please ensure this is cleaned to prevent contamination of food.

      • Scented lysol was being used a surface sanitizer. Please ensure that a non scented sanitizer is used to wipe down food contact surfaces. Please ensure that test strips are provided to measure the concentration of the sanitizer.
