      • Observation (CORRECTED DURING INSPECTION): Observations: Package of bacon left at room temperature. Operator stated it has been taken out of cooler at 10:30a.m. (now 12:30p.m.) to be prepared. Bacon measured 40 deg. C as it was sitting on hot counter.
      • Corrections: Package of bacon was discarded due to time-temperature abuse. Do not store meats at room temperature, prepare immediately after removing from cooler to prevent pathogen growth

      • Observation: Observations: 1) Minor food debris noted under storage shelving. Red pop tray was wedged underneath broken shelf to support shelving

      • Corrections: 1) Repair or replace shelving so that the pop tray is not needed to support the shelf. Do not place objects under shelving as it inhibits proper cleaning. Clean food debris as it can attract rodents
