      • - The mop sink surround caulking was dirty/in disrepair and requires replacement.- Tiles were missing from the base walls in front of the mop sink and staff indicated that work was underway to fix the damage and replace the tiles.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The ice machine caulking above the basin lid was in disrepair and insulation was exposed - pointed out issue to shift manager. Repair ice machine so that insulation is not exposed.

      • Food handling permit was not visibly observable to the public.Supervisor moved the food handling permit from the back office and posted it behind the checkout counter.Ensure that the food handling permit is placed in a conspicuous manner.

      • High risk foods including mayonnaise and cheese, in ice bath were not being properly kept cool at the assembly line. The amount of ice and water used was insufficient to keep foods at 4C or less.Ensure water and ice is at the same level of the food in the ice bath container to maintain cooling temperatures below 4C.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel in one of the staff washroom hand sinks was stored on top of the toilet tank. Ensure paper towel is installed in the provided dispenser to prevent contamination.
