- Observation: (CORRECTED DURING INSPECTION) Potentially hazardous foods (PHFs) such as tomatoes, lettuce, onions, cheese for burgers are served at room temperature and discarded every four hours. The time stickers on one of the line areas was beyond four hours (4hours 30mins). When the food handler was asked when the foods were put there, they couldnt tell the exact time.
- Corrective Action: The food handler was able to recall the exact time the PHFs were put and correct the time stickers. Operators are to ensure all staff are recording the exact time foods are put on the line to ensure the time stickers are exactly four hours and the foods are discarded after four hours. Also, best practice for food safety will be for all PHFs to be stored or displayed at a temperature of not more than 4°C or not less than 60°C as stated in section 14 (2) of the Food Premises Regulation.

- Observation: Also, a box of stickers stored on the same shelf with onions and other food items. Contamination of food from contact with objects or non food items, cause serious illness.

- Corrective Action: Food and food equipment should be stored away from non-food items.

- Observation: Dust observed on outter part of ice machine. Also, accumulation of dirt, dust on the upper part of the ice machine. Public Health Significance: Ice could be contaminated with dust, dirt and this can cause illness.

- Observation: Permit was stored inside office and posted at a conspcuous location. Health Permit should be posted in a conspicuous location where the public can view it and know that the premises is an inspected facility. The most up to date decal sticker should be on permit.
- Corrective Action: Opertor to post permit in a conspicuous location.

- Observation: Walk-in freezer has heavy ice build-up and is not maintained in sanitary conditions. Cardboard boxes with food are covered in ice and the floor has ice with some food debris frozen in. Operator is aware of the issue and has maintenance scheduled at the end of August. Ice may carry harmful microbes that contaminate food stored inside the freezer increasing the risk of foodborne illness.
- Corrective Action: Operator to clean-up ice from freezer and ensure the freezer is maintain in a sanitary condition.

- Observation: The operating permit not displayed in the store. Food premises must have a valid operating permit displaying in a conspicuous location.
- Corrective Action: The operator to acquire a copy of operating permit and post it at a clearly visible location in the food premises.

- Observation: Huge build-up of ice on the fan in the freezer was observed. (Public health significance) Ice build-up can cause cross-contamination of food leading to foodborne illness.
- Corrective Action: Operator to clean the ice build-up on fan in the walk-in freezer and to get it repaired or replaced as required.

- Observation: Food was stored on the floor in the walk-in freezer in an unsanitary condition. (Public health significance) Food should be stored minimum of 15 cm (6 in.) off the floor on racks or shelves and at least 5 cm (2 in.) from the walls to allow for visual inspection.
- Corrective Action: Operator to acquire proper shelving for food storage in the walk-in freezer and to ensure the food is stored in a sanitary manner which facilitates adequate cleaning of the floor to prevent accumulation of food debris on the floor.

- Observation: (CORRECTED DURING INSPECTION) Inadequate sanitizer concentration in the sanitizer bucket in the food preperation area. The concentration of Quats sanitizer recorded at 50 ppm at time of inspection. (Public health significance) The concentration of Quats sanitizer should be at least 200 ppm to be able to effectively sanitize food contact surfaces.
- Corrective Action: Sanitizer solution in the sanitizer bucket discarded immediately and replaced with fresh solution which was tested for sanitizer concentration was recorede satisfactory.
