      • CEILING FLUORSCENT LIGHT FIXTURE IN BACK AREA OF KITCHEN:Not functioning at the time of inspection - as discussed with operator, will replace this fixture with a LED fixture to provide more adequate lighting.PROFESSIONAL EXHAUST CANOPY HOOD CLEANING:As per sticker on side of hood, overdue and was supposed to be completed in August 2025.Also noted that the company hired previously is Hydroblast which is based in Edmonton.Please reach out to the above company and schedule a date/time for this required cleaning.

      • CEILING LIGHTING FIXTURES IN KITCHEN AREA:Total of four (4) light tubes are not in good working order - in particular, the following locations:1) Fixture near the mechanical dishwasher (2 tubes).2) Fixture near the exhaust canopy hood - 1 tube.3) Fixture near the back of the kitchen area - 1 tube.As mutually agreed upon, a timeframe of March 31, 2025 has been granted to the manager to complete this repair.

      • FOOD HANDLING PERMIT FEE INVOICE:Hand delivered Food Permit Fee Invoice to the owner during the inspection - due to other circumstances, payment option of in-person bank payment (rather than on-line credit card payment) will be the only option and task will be completed either today or tomorrow by the owner.

    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Digital thermometer for use in a commercial dishwasher is required to monitor proper hot water temperature for the final sanitizing step in the high temperature Hobart mechanical dishwasher.A final hot water temperature at 82 degrees C (at the manifold) and between 72 - 77 C at dish level and which should be verified with a working thermometer.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Professional canopy hood cleaning by Hydroblast had been previously completed - thank you. Noted the next professional cleaning is scheduled for May 2024 (sticker on the side of the hood). The required cleaning has yet to be completed as of August 22, 2024.Operator has informed our Department that Hydro Blast has been reached out to confirm date and time of cleaning but no firm date has been given by the company.In the interim, please continue to maintain the canopy filters in a clean condition and free of grease accumulation.

      • Observed a moderate accumulation of grease and debris on the top of the grill/cooking equipment and also underneath both the deep fat fryer and the grill/cook top equipment.Please ensure to carry out a thorough cleaning of the above areas and maintain in a clean and sanitary condition moving forward.

    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Manager has stated that the valid food handling permit (2023 - 2024) has been found and will be printed and posted on the wall in the dining area and in full view of patrons.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Professional canopy hood cleaning by Hydroblast had been previously completed - thank you. Noted the next professional cleaning is scheduled for May 2024 (sticker on the side of the hood).2) Burnt out tubes in ceiling light fixture in the corner of the kitchen facility. The rest of the ceiling light fixtures are fluorescent and our Department would recommend the replacement of these existing light fixtures and upgrade to LED which are more energy efficient and provide more lighting to easier facilitate cleaning. Finally, there was a ceiling light fixture in the middle of the kitchen and observed dangling wires from this same fixture - Manager has informed that a carpenter has been secured to complete this task.

      • Observed during the inspection on February 8, 2024 that a moderate improvement has been made with the clutter in the kitchen; however, continue to work on reducing the clutter to easier facilitate cleaning and reduce the potential of mouse harborage areas.

    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Require chlorine test strip papers for measuring/verifying that the final sanitizing step in the Hobart mechanical dishwasher is minimum 100 ppm chlorine (bleach).Recommended that these same strips can be purchased on-line through Amazon.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Professional canopy hood cleaning is well past overdue - Manager has reached out to Hydroblast to inquire about a date and time for the next service - no firm date and could take several weeks from today's inspection to complete this cleaning.2) Burnt out tubes in ceiling light fixture in the corner of the kitchen facility. The rest of the ceiling light fixtures are fluorescent and our Department would recommend the replacement of these existing light fixtures and upgrade to LED which are more energy efficient and provide more lighting to easier facilitate cleaning. Finally, there was a ceiling light fixture in the middle of the kitchen and observed dangling wires from this same fixture - Manager has informed that a carpenter has been secured to complete this task.

      • OVERALL, kitchen facility was found to be cluttered and hard to navigate through all the items in the kitchen. Recommend to the Manager that an inventory of items which can be discarded should be removed from the kitchen to easier facilitate cleaning.
