- Staff were observed preparing food using woks placed on two portable hot plates without any mechanical ventilation system above. Visible accumulation of grease and grease droplets were observed on the ceiling and the ceiling vent cover directly above the hot plates. The food permit restriction indicates that no extensive grease producing cooking is allowed. Please ensure that any extensive grease producing cooking is removed from the menu.

- Two used cleaning cloths were observed to be sitting on the counter when not in use. Ensure cleaning cloths are stored in a sanitizer such as 100ppm bleach/chlorine or discarded when not in use. The operator placed the indicated cloths in the laundry during the inspection.

- A bleach/chlorine sanitizer was measured at a concentration of 1000ppm. Ensure bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer during the inspection.

- Sanitizer spray bottle measured over 200 ppm chlorine - solution was diluted during the inspection. A 100 ppm chlorine solution can be made by mixing 1/2 tsp of bleach per liter of water.

- Rags are being used for drying hands after handwashing. Please only use single use paper towels. Staff bathroom rag was removed and replaced with paper towel, back kitchen sink rag was removed and single use paper towel is available.
