- Sips - There was no barrier between the cutting board and the public area.Prepare food in an area that is not subject to customer contamination or install a sneeze guard with proper dimensions. A vertical pane must be at least 6 feet from the floor. If the height falls below 6 feet, a 1 foot top return piece is required.
- 10. Is the market free of vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- 1) There were larger gaps at the sliding entrance doors. Determine if door sweeps can be adjusted/installed to minimize the gaps.
- 12. Are general nuisance conditions, other than those noted in other violations, being prevented at this farmers' market (Non-Critical)?
- Sips - Testing equipment was not available for monitoring the high temperature dishwasher.Provide testing equipment such as a probe thermometer with max function. Ensure the dishwasher is tested daily and the sanitizing temperature reaches minimum 71C.
- 14. Is the market maintained in a clean and sanitary condition?
- 1) The tray washing area only has 1 sink, but the Manager is installing a 2nd sink to facilitate cleaning and sanitizing of trays. Until the sink is installed, the trays will be washed and sanitized in vendor booths for 2 weeks.
