- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Quaternary sanitizer solution prepared in a spray bottle tested too strong, was @400 ppm. The product instructions advise to prepare @200 ppm for sanitizer use. Corrected onsite. Ensure you follow manufactures instructions for diluting properly. Dustbane MIFU states 8ml per 4 litres for 200ppm concentration. Test with quat test strips onsite for proper concentration.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- The high temperature dishwasher in the bar requires a temperature probe (with min/max) setting to confirm rinse temperature meets minimum 71 deg C at dishrack level. Corrected: operator provided photo for thermometer with min/max setting for use.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- Kitchen ceiling- acoustic tile is installed in ceiling. Restriction- only cooking in ventless oven is allowed. No grease laden or excessive steam allowed in the kitchen.
