      • 1. Used wet cleaning cloths were not being stored in a sanitizer solution. Cleaning cloths were observed on the kitchen counters.2. No prepared sanitizer solution was observed.The PHI prepared 100ppm chlorine/bleach sanitizer solution during inspection and stored the cleaning cloths. The staff present was not aware of the required water:bleach mixing quantity (half teaspoon per liter of water) for food contact surfaces.Please ensure sanitizer solutions are prepared daily and cleaning cloths stored in the sanitizer solution when not in use. Your chlorine test strips must always be available to measure the concentration of sanitizer solutions. 100ppm is required.
