- Quats-based sanitizer (lemminee) was measured at greater than 400ppm. At greater than 400ppm, quats can be toxic. Test strips were not able to test the solution for correct concentration.*** Please ensure that quats-based sanitizer is 200ppm and tested daily with test strips and recorded. ***

- The high temperature dishwasher sanitizing rinse temperature was only 65°C. To adequately sanitize dishes this temperature must be 71°C or greater. *** Please service the dishwasher to ensure that is can heat the dish to a minimum of 71°C. In the interim, please manually sanitize dishes and equipment following the 3-compartment sink method. ***

- The back door was propped open at the time of the inspection. This can allow the entry of pests. *** please ensure all doors are closed or provided with screens to prevent the entry of pests. ***

- It was observed that the sanitizer bottle spray labeled Leminee was actually detergent solution and was not the appropriate sanitizer. The operator was instructed to make an appropriate sanitizer with a correct solution called Leminee which should have a correct concentration measurement of 200 ppm. - Please always check, use the correct product and the solution concentration. Use the test strips to validate the correct required concentration of 200 ppm. Please DO NOT use Oxivir on any food contact surfaces, glassware, utensils, or dishes. Can be used on chairs, tables, toilet countertops, etc. Please always read the manufacturer's information.
